We love sun-cooked food and have spent hundreds of hours experimenting to come up with the absolute best solar cooker recipes. Solar Cooker Recipe #1: Breakfast Frittata

Eggs in the GoSun come out soft, moist and supple, and are a perennial favorite for their versatility. You can use any combination of vegetables and cheese to fit your taste. For this version, we used shallots, red and orange bell peppers, and cheddar. Some other suggestions include: onions, olives, and feta; broccoli and gouda; tomatoes, goat cheese and basil; we could go on and on. Try something new each time!

INGREDIENTS

1 Cup Chopped Vegetables

4 Eggs

1/4 Cup of Milk

1/2 Cup of Shredded or Crumbled Cheese Salt and Pepper to taste

Solar Cooker Recipe #2: Open Faced Omelette

Perhaps the easiest and fastest recipe imaginable for the GoSun Grill, eggs are a fantastic base for all sorts of culinary adventures. Just make sure to oil the tray before adding ingredients, or use a sheet of parchment paper for easy removal.  Special thanks to GoSun user Terry Urbine for submitting this delicious recipe!

4 eggs, beaten
2 peppers, small, chopped
3 scallions, chopped
3 pcs. bacon, precooked
1 cup cheese, your choice
Seasoning to taste

Solar Cooker Recipe #3: Black Beans and Rice

Rice and beans are a staple of the latin kitchen, particularly Central America and the Latin Carribean. I once spent a week in Costa Rica, rough I know, and this was served at literally every meal, including breakfast. In Cuba this is called Moros y Cristianos, Moors and Christians, and is a very common side dish. Order it with Ropa Vieja, literally Dirty Clothes, and you’ve got the Cuban national dish. I’ll make a recipe for that once my cholesterol is clear under 300 and my doctor says that my beef intake is too low and I desperately need to consume braised latin flank steak.

Ingredients: 

1/2 cup white rice

1 can black beans-you could sub other beans too if you like, and if you like more beans, go ahead and add another can. You could even go crazy and mix the types of beans

½ red onion, diced

1 clove garlic, minced

2 bay leaves

1 sprig Epazote-if you can find it. Most latin markets will have it

1 cup water, or stock

½ cup green peas

Solar Cooker Recipe #4: Chicken Biryani

An Indian classic, combining rice, yogurt and a divine constellation of spices... perfect for the Grill's flavor trapping abilities! Missing some of the ingredients listed? INGREDIENTS

Marinade: 
½ lb Chicken
¼ tsp Turmeric
¼ tsp Crushed Dry Mint
1 teaspoon Salt
¼ tsp Crushed Cardamom
1-2 Crushed Cloves
¼ tsp Cinnamon
½ teaspoon Garam Masala 
2 teaspoons Ginger + Garlic Paste
2 teaspoons Lemon Juice
½ cup Yogurt
¼ teaspoon Chili Paste (optional)

Rice: 
1 cup Basmati Rice
1 tsp Salt

Other ingredients: 
1 tbsp Olive Oil
6 tbsp Fried Onions
Anise stars
2 Bay Leaves
¼ tsp Shahi Jeera (Black Cumin)
2 tbps Fresh Lemon Juice
a few pinches of Saffron (Nice to have but optional)

Solar Cooker Recipe #5: Solar Lasagne

Yield: 4 Servings (Add 20 minutes for a double recipe)
PrepTime: 30 Minutes
Cook Time: 90 Minutes
 

INGREDIENTS

6 Lasagne Noodles, pre-cooked to al dente, halved as needed to fit pan
2 cups Spaghetti sauce
1 cup Sausage, cooked (we use Dobbins hot with extra sage)
3-4 cups Mozzarella
Filling:

1 cup Parmesan
1 Egg, beaten
2 cups Ricotta Cheese
1 tsp. Basil
1 tsp. Garlic salt
1 tsp. Oregano
2 tsp. Parsley
Salt & Pepper to taste

Solar Cooker Recipe #6: Chicken Pot Pie

A family favorite and the ultimate comfort food. Special thanks to GoSun user Terry Urbine for submitting this delicious recipe!

INGREDIENTS

1 Pie Crust
6 Chicken Tenders, cut up
1 Large Potato, diced
1 Onion, diced
1 Garlic Clove
3 Celery Stalks, chopped
3/4 cup Broccoli
1/4 cup Baby Carrots
2 tbsp. Butter
1/4 cup Flour
1-3/4 cup Milk

1 tsp. Cumin
1/2 tsp. Parsley
1 tsp. Garlic salt
1/2 tsp. White Pepper
1/2 tsp. Basil
1/2 tsp. Dill
1/2 tsp. Sea Salt

Topping:

2/3 cup Flour
1/2 cup Shredded Cheese
1 tsp. Garlic Salt
1 tbsp. Sugar
1/2  tsp. Salt.

Solar Cooker Recipe #7: Red Curry Beef

Red Curry Beef With Butternut Squash

Yield: 4 servings

Prep Time: 20 minutes

Total Time: 1 hour 30 minutes

  

 Ingredients

2 cups butternut squash
1 cup beef, cubed. You can use any cut here really, but since your braising it, a cheaper, tougher cut from the chuck-like a shoulder roast-is ideal.
1 cup chicken stock
1 cup coconut milk
1 TB red curry paste
1 tsp fish sauce-you could use soy sauce if you don’t have fish sauce, but the stuff never goes bad and if you like southeast Asian food, its worth having it in the back of your cabinet for the next decade.

Solar Cooker Recipe #8: Tandoori Chicken

I know, I know, “But how could this little solar tube oven developed in outer space by Patrick mimic a tandoor oven??” Well, it can’t, but neither can an oven or a grill. Tandoor ovens get to like 900 degrees and are made from clay. I unfortunately don’t have one in my backyard, but if I win the lottery, that will be one of the things I splurge on.

Tandoori Chicken in the GoSun Sport Solar Cooker

 Ingredients:

1 clove garlic

1 knob of ginger, 1 inch

3 TB tandoori seasoning

1 cup yogurt, plain-with fat  -see note below

1 TB achiote paste, or some red food coloring

Solar Cooker Recipe #9: Pumpkin Scones

Our friends at Glenergy Canada our leading Canadian distributor, created this truly scrumptious recipe to take advantage of the season's bounty! Enjoy with a cup of hot cider and some friends.

INGREDIENTS

2 c All Purpose Flour
1 tbsp. Sugar
1 tbsp. Baking Powder
½ tsp. Salt
1 ½ tsp. Pumpkin Spice
½ c Canned Pumpkin
3 tbsp. Half-And-Half Cream
1 Large Egg
6 tbsp. Cold Butter (Temperature is important!)

Solar Cooker Recipe #10: Mulled Wine

Spiced wine is in the solar cooker is awesome. I had it at a Christmas market in Germany once. I didn’t think anything could warm you up that quick but it was like 2 sips and I took off my coat in a snowstorm. I imagine Vikings would drink this in times of yore probably out of cups carved from horn. Nowadays the Swedes call it Glogg and probably drink it out of Ikea cups with a name that you can’t pronounce.

Serves: Varies depending on how drunk you want to get

Ingredients:
1 bottle of red wine-leftover works great
Peel of 1 mandarin orange
1 cinnamon stick
1 inch ginger, smashed
1/8 tsp Nutmeg, grated
